FOOD DESERTS. As defined by the U. S. Department of Agriculture, "food deserts" were areas in which residents with low incomes had limited access to fresh foods. In Dubuque these areas existed in the North End and Washington Street neighborhoods.

In cooperation with CONVIVIUM URBAN FARMSTEAD and the COMMUNITY FOUNDATION OF GREATER DUBUQUE worked with residents in efforts to teach fifteen fourth ad fifty-grade students from FULTON ELEMENTARY SCHOOL about nutrition and cooking techniques. DUBUQUE URBAN FARMSTEAD grew crops for their Community Supported Agriculture customers and hosted two community events to help educate Washington Neighborhood residents on how to use fresh, local produce. Education was provided in how to store vegetables and cook them. Recipes were provided each week along with cooking lessons. Owners of the farm taught lessons at the MULTICULTURAL FAMILY CENTER and DUBUQUE RESCUE MISSION in food preparation.
